Flavor Bursting Chicken Recipe

Ingredients

  • 4 chicken breasts
  • Salt & pepper
  • 1 green bell pepper, seeded and cut into bite-sized chunks
  • 1 can of whole kernel corn, drained
  • 2 or 3 roma tomatoes, diced
  • 1 can of chick peas, rinsed & drained
  • 1 small yellow onion, diced into bite-size chunks or rings
  • 1 can of tomato sauce
  • 1 can of tomato paste, diluted in 1 to 1 1/2 cups of water
  • 1 tbsp salt
  • 1 tsp pepper
  • 1/2 tsp paprika,
  • 1/4 tsp Chili powder
  • 1-2 bay leaves
  • Rice

Instructions

  1. Season both sides of chicken breasts with salt & pepper.
  2. Then in a large skillet brown chicken breasts.
  3. Placed browned chicken in the bottom of a slow cooker.
  4. Top with the remaining ingredients.
  5. EXCEPT RICE
  6. Cook on low for 5-6 hours.
  7. When chicken is nearly done, make rice according to the box directions.
  8. To serve Remove bay leaf from slow cooker.
  9. Put rice on a plate.
  10. Add 1 piece of chicken and top with ‘veggie sauce’.
