Flavor Bursting Chicken Recipe
Ingredients
- 4 chicken breasts
- Salt & pepper
- 1 green bell pepper, seeded and cut into bite-sized chunks
- 1 can of whole kernel corn, drained
- 2 or 3 roma tomatoes, diced
- 1 can of chick peas, rinsed & drained
- 1 small yellow onion, diced into bite-size chunks or rings
- 1 can of tomato sauce
- 1 can of tomato paste, diluted in 1 to 1 1/2 cups of water
- 1 tbsp salt
- 1 tsp pepper
- 1/2 tsp paprika,
- 1/4 tsp Chili powder
- 1-2 bay leaves
- Rice
Instructions
- Season both sides of chicken breasts with salt & pepper.
- Then in a large skillet brown chicken breasts.
- Placed browned chicken in the bottom of a slow cooker.
- Top with the remaining ingredients.
- EXCEPT RICE
- Cook on low for 5-6 hours.
- When chicken is nearly done, make rice according to the box directions.
- To serve Remove bay leaf from slow cooker.
- Put rice on a plate.
- Add 1 piece of chicken and top with ‘veggie sauce’.
