Chicken Breast Stuffed with Spinach and Cheese with Garlic Sauce
Ingredients
- 4 Chicken breasts boneless and skinless Thin sliced
- 1 1/2 teaspoons Vegetable oil
- 1/2 teaspoon Garlic cloves Crushed
- 1 medium Green onion Finely chopped
- 1/4 cup Chopped spinach
- 1/4 Cup Mushrooms Diced
- 1/4 cup Mozzarella Shredded
- 1/4 cup Chicken Stock
- 1 1/2 teaspoon Margarine
- 1 Teaspoon Garlic Crushed
- 1 1/2 cups Tomato Diced
- 1/3 Cup Chicken Stock
Instructions

- In nonstick skillet, heat oil; sauté garlic, onion, spinach, and mushrooms until softened. Spoon evenly over breasts; sprinkle with cheese. Roll up and fasten with toothpicks.

- Place chicken in baking dish; pour in stock. Cover and bake for 10 minutes or until chicken is no longer pink. Move chicken to serving dish and keep warm.

- SAUCE: Meanwhile, in small saucepan, melt margarine; sauté garlic for 1 minute. Stir in tomatoes and chicken stock; cook for 3 minutes or until heated through. Serve over chicken.
