Chicken: Southern Fried Chicken

Ingredients

  • 4 Chicken breasts boneless and skinless Sliced into about four pieces
  • 125 grams Self raising flour
  • 2 teaspoons Celery salt
  • 1 teaspoon sea salt
  • 2 teaspoons Black pepper
  • 2 teaspoons Paprika
  • 1 teaspoon cayenne pepper
  • 1 1/2 teaspoons Dried thyme
  • 2 teaspoons Dried oregano
  • 1 teaspoon Garlic powder More or less
  • 2 teaspoons Ground cumin
  • 1 teaspoon Ground coriander
  • 1/2 pint milk
  • 3 tablespoons sunflower oil

Instructions

  1. Set the oven to 180 Celsius or 356 Fahrenheit
  2. Cover the chicken with the milk whilst you make the dredge
  3. Mix all the dry ingredients together
  4. Coat each piece of chicken with the dredge
  5. Starting with the largest pieces of chicken brown each piece in batches in a frying pan until just brown and transfer to a roasting tray to cook through in the oven
