Sweet and Sour Chicken

Ingredients

  • 2 cups White rice
  • 1 can pineapple chunks
  • 1/2 cup water
  • 1/3 cup soy sauce
  • 1 teaspoon soy sauce
  • 2 tablespoon corn starch
  • 3/4 teaspoon garlic powder
  • 1 pound boneless chicken breasts cut into strips
  • 2 tablespoons Vegetable oil
  • 1 small onion chopped
  • 1 small red pepper chopped

Instructions

  1. Prepare rice according to the package directions
  2. Drain pineapple, reserve 1/4 cup juice
  3. Stir together in small bowl, reserved juice, water 1/3 cup soy sauce 1 tablespoon cornstarch, an d garlic powder. Set aside
  4. Combine with remaining 1 tablespoon corn starch and 1 tablespoon soy sauce in a medium bowl. Heat oil in large skillet over medium heat. Add chicken. Cook until lightly browned. Add pepper and onion . Cook til just tender. Add reserved mixture; cook stirring 2-3 minutes or until sauce boils and thickens. Stir in pineapple chunks and heat through. Serve over rice.
