Stir-Fry Empress Lemon Chicken

Ingredients

  • 2 tablespoons cornstarch plus 2 1/2 teaspoons, divided
  • 4 tablespoons Kikkoman Soy Sauce divided
  • 1 pound boneless skinless chicken breast cut into 1 inch pieces
  • 1/2 cup sugar
  • 3/4 teaspoon grated lemon peel
  • 2 tablespoons lemon juice
  • 1/4 cup water
  • 2 tablespoons vegetable oil
  • 1 bunch green onions cut into 1 inch lengths

Instructions

  1. Combine 2 tablespoons cornstarch and 1 tablespoon soy sauce in a small bowl; stir in chicken. Let stand for 30 minutes.
  2. Meanwhile, combine sugar, remaining cornstarch, lemon peel and juice, remaining soy sauce and water; set aside. Heat oil in hot skillet or wok over medium-high heat. Add chicken and green onion; stir-fry 3 minutes. Remove. Reduce heat to medium. Pour soy sauce mixture into skillet; bring to a boil. Cook, stirring constantly, 1 minute. Add chicken and green onions, stirring to coat all pieces well with sauce. Serve immediately.
