Chicken Florentine Recipe

Ingredients

  • 3/4 pound boneless skinless chicken breast cut into strips.
  • 1 small onion chopped
  • 2 tbsp butter
  • 2 cloves minced garlic
  • 1 package (10 ounce) frozen spinach thawed and squeezed
  • 2 cups chicken broth
  • 1 cup water
  • 2 cups instant rice
  • 2/3cup grated parmesan cheese

Instructions

  1. cook chicken and onion in butter in large skillet stirring often. till chicken is browned add garlic and cook for less than a minute. add chicken, broth and water.
  2. bring to a boil. reduce heat;simmer approx 5 mins stir in rice and cheese. cover, remove from heat.let stand 10 mins fluff up with a fork
