Chicken and wild rice casserole
Ingredients
- 3 cups chicken breasts cooked
- 2 cups wild rice cooked
- 1 pkg frozen vegetables
- 1/2 cup onion chopped
- 2 T coconut oil
- 1 cup chicken stock
- 3 T almond flour
- 1/2 cup milk
- 1/2 cup parmesan cheese
- 1/4 cup almonds slivered
Instructions
- In casserole dish combine chicken, cooked rice, and vegetables.
- In frying pan, melt coconut oil, stir in onions and cook 1 minute. Stir in flour and cook 1 more minute. Whisk in chicken stock and simmer. Whisk in milk and simmer. When sauce has thickened pour over chicken mixture.
- Sprinkle with parmesan and almonds.
- Bake 350 degrees for 45 minutes to 1 hour.
