Chicken and wild rice casserole

Ingredients

  • 3 cups chicken breasts cooked
  • 2 cups wild rice cooked
  • 1 pkg frozen vegetables
  • 1/2 cup onion chopped
  • 2 T coconut oil
  • 1 cup chicken stock
  • 3 T almond flour
  • 1/2 cup milk
  • 1/2 cup parmesan cheese
  • 1/4 cup almonds slivered

Instructions

  1. In casserole dish combine chicken, cooked rice, and vegetables.
  2. In frying pan, melt coconut oil, stir in onions and cook 1 minute. Stir in flour and cook 1 more minute. Whisk in chicken stock and simmer. Whisk in milk and simmer. When sauce has thickened pour over chicken mixture.
  3. Sprinkle with parmesan and almonds.
  4. Bake 350 degrees for 45 minutes to 1 hour.
