Chicken with Thyme and Garlic

Ingredients

  • 3 lbs boneless chicken breast halves
  • 6 cloves garlic minced (~ 1 tbsp)
  • 1 1/2 tsp dried thyme
  • 1/4 cup orange juice
  • 1 tbsp balsamic vinegar

Instructions

  1. Place in 4 quart slow cooker. Sprinkle chicken with garlic and thyme.
  2. Cover and cook on low for 5-6 hours or on high for 2.5-3 hours. Transfer chicken to platter and keep warm.
  3. For sauce, skim fat from juices and then strain juice into small saucepan.
  4. Bring to boil; reduce heat.
  5. Boil ~ 10 minutes or until reduced to 1 cup. Spoon over chicken.
