Impromptu Chicken Stew Recipe

Ingredients

  • 2 Tbsp. Olive oil
  • 2 boneless, skinless chicken breasts, cubed
  • 1 small onion chopped
  • 1 stalk celery with leaves, chopped
  • 1 large carrot chopped
  • 2 potatoes cubed
  • 1/2 tsp. thyme
  • 1/2 tsp. basil
  • 1/2 tsp. oregano
  • 2 Tbsp. soy sauce
  • hot sauce to taste (I used habanero, it’s got a nice flavor and good kick)
  • 1 1/2 cups water
  • 1 can (12 oz.) beer (I used Asahi, a Japanese beer - really good!)
  • salt and pepper to taste

Instructions

  1. In a hot skillet, heat olive oil.
  2. Saute onions until browned. Add soy sauce to de-glaze the pan.
  3. Add chicken and cook until done.
  4. Add spices, celery, carrot and beer. Cook about 20-30 minutes.
  5. Add potatoes and water.
  6. Cook another 30 or so minutes until thick and rich.
  7. Serve with a nice bread and real butter!
