Lemon Chicken

Ingredients

  • 4 Boneless chicken breasts halved
  • 1 ts lemon pepper
  • 1 tbs veg oil
  • 3 tbs lemon juice
  • 1 ts lemon peel grated
  • 1/4 cup pistachio nuts chopped and toasted
  • lemon slices if desired

Instructions

  1. Flatten chicken to about 1/4 inch thickness. Sprinkle both sides of breasts with lemon pepper.
  2. Heat oil in skillet over med-high heat. Cook chicken,lemon juice and peel until chicken is no longer pink. Top with toasted nuts and lemon slices
