Chicken with Feta Spinach Sauce

Ingredients

  • 2 pounds chicken breast (4) 8 ounce halfs, Boneless, skinless
  • 1/2 stick Butter
  • 1/4 cup Flour
  • 3/4 cup Chicken broth
  • 1/2 cup Milk
  • 4 ounces Feta cheese crumbled
  • 1 teaspoon Salt
  • 1 cup Spinach chopped
  • 1/4 cup Red bell pepper diced

Instructions

  1. - Season the chicken breasts with paprika, salt, pepper & cayenne pepper
  2. - Bake at 325 fro 30 minutes or until done.
  3. - Meanwhile melt the butter in a saucepan over med heat.
  4. - Add the flour.
  5. - Add broth and whip the mixture well using a whisk.
  6. - Add milk and whisk.
  7. - Add salt & feta cheese bring to boil reduce heat and simmer 15 minutes, stirring frequently.
  8. - Stir in the chopped spinach and red peppers
  9. - Simmer another 15 minutes.
  10. - (Optional) serve chicken over wild rice
  11. - top with sauce
