Roasted Chicken and Vegetables

Ingredients

  • 12 oz. Chicken breasts boneless and skinless cut in bite-size chunks
  • 3 medium Red Potatoes cut in smaller chunks
  • 1 large Red Pepper cut in larger chunks
  • 1 large Green Pepper cut in larger chunks
  • 1 medium Onion coasely chopped
  • 2 tablespoons Olive Oil
  • 1/2 teaspoon Italian Seasoning
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Pepper

Instructions

  1. Put all ingredients together in an oven safe baking dish sprayed with cooking spray. Toss to coat with seasonings and oil. Bake 35 minutes at 450 degrees, stirring occasionally.
