Green Goddess Chicken Salad Dip
Ingredients
- 2 garlic cloves
- 1 shallot, peeled
- 2 tbsp. lime juice (from 1 lime)
- 2 tbsp. lemon juice (from 1 lemon)
- 3 c. packed baby spinach
- 1/2 c. basil leaves
- 1/2 c. parsley leaves
- 1/2 c. mayonnaise
- 1/2 c. sour cream
- 1/2 avocado
- 1/4 c. grated parmesan cheese
- 1 1/2 tsp. salt
- 3/4 tsp. ground black pepper
- 4 c. finely chopped cabbage
- 1 1/2 c. finely chopped cucumber
- 4 scallions, thinly sliced
- 3 c. finely chopped rotisserie chicken
- Thick cut pita chips or tortilla chips, for serving
Instructions
- For the dressing: Combine the garlic, shallot, lime and lemon juices, spinach, basil, parsley, mayonnaise, sour cream, avocado, and parmesan cheese in a blender canister. Blend until very smooth, 1 to 2 minutes.
- For the salad dip: Combine the cabbage, cucumber, scallions, and dressing in a large bowl. Stir to combine. Fold in the chicken. Serve with pita or tortilla chips.
