Brandied chicken with cheese

Ingredients

  • 4 Chicken breast or turkey breast (uncooked)
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Pepper
  • 1/4 cup Flour
  • 1/4 cup Butter
  • 1/4 cup Brandy or substitute chicken broth
  • 4 slices Provolone cheese or fontina cheese

Instructions

  1. 1. Sprinkle chicken with salt and pepper. Coat chicken with flour.
  2. 2. Melt butter in 12 in skillet over medium heat. Cook chicken in butter on each side until brown.
  3. 3. Add brandy. Cook uncovered until liquid has evaporated and chicken is no longer pink in center. Top chicken with cheese; remove from heat. Cover and let stand for about 2 min or until cheese is melted.
